Recipes

I have had a few requests for a couple recipes. So without further ado:

Chocolate Chip Cookies (For Millie and Travis)

**This is the Toll House Cookie Recipe**

2 sticks butter, softened
3/4 C packed brown sugar
3/4 C granulated sugar
1 tsp vanilla extract
2 eggs
2 1/4 C flour
1 tsp salt
1 tsp baking soda
2 C semi sweet chocolate chips (preferably toll house)

pre-heat oven to 350. --unless you have a convect bake option on your oven. if you are lucky enough to have this then set your oven to about 315 on convect bake. you may have to test out the heat a few times to find the perfect temp for your oven.--

Blend butter, sugars, and vanilla together. Do not over blend. Add eggs one at a time.

Add flour, salt, and baking soda. Blend together. Scrape sides.

Add chocolate chips. Blend.

Drop teaspoonful size balls onto the cookie sheet.

Cook about 9-10 minutes.

Let cool on cookie sheet for a few minutes to finish the cooking.

Yum.

Lettuce Wraps (For Tina)

**These are my interpretation of PF Chang's lettuce wraps. Gotta give credit where credit is due.**

2 chicken breasts, chopped finely
1 can water chestnuts, minced
4 green onions, chopped
mushrooms, minced

1 head lettuce. Cut in half to create "cups".

1 T veggie oil
2 dashes oyster sauce
1/8 C soy sauce

dipping sauce::
equal parts soy sauce and white vinegar
hot mustard, to taste
garlic chili paste, to taste

In a hot wok or large pan add the veggie oil and then the veggies. Saute for 2 minutes. Add oyster sauce1

Add chicken. Add soy sauce. Saute 3 minutes.

Place cooked mix in lettuce cups. Top with dipping sauce.

Enjoy.

PS:::: I take virtually no credit for either of these recipes. I just really like to practice. Who doesn't love to practice making cookies?? As long as I get to taste the result!

I too love making cookies. And 'tis the baking season. I have been making a lot of goodies lately. I make a million substitutions though and love to mess around with the recipes to make them healthier. Happy baking.
